Game Day Food

For our Superbowl Party, I wanted to go all out with party food. I didn't really care about the game, but it was game time for making appetizers. Cory and I don't eat enough to regularly splurge on these items at other times. For the party, I made:

Soft Pretzel Bites from Two Peas and Their Pod

Pigs In a Blanket (Picky Palate recommended using sausage from Costco, but it was closed when I went. I made it with the mini sausage from the grocery store and it was still great).

I also made my mom's seven layer dip. I only used one can of olives, because we aren't huge fans. I forgot to take a picture until we had already started eating :)

LAYERED BEAN DIP

LAYER:
2 cans refried beans mixed with 2 T. taco seasoning

3 ripe avocados, mashed with 2 T. lemon juice, ½ t. salt, ¼ t. pepper

1 ½ c. sour cream mixed with ½ c. mayonnaise

1 bunch chopped green onions

3 tomatoes, chopped

2 c. shredded sharp cheddar cheese

2 - 2.25 oz. cans sliced olives, drained



Then, I made blueberry phyllo tarts. You can make these with blueberry, raspberry, or lemon topping. I made just half of the cheese layer, because I only made blueberry topping.

DESSERT TARTS FILLING
Fills ?? about 90 one bite phyllo shells
Bottom layer:
8 oz. Mascarpone cheese
16 oz. whipped cream cheese
½ c. powdered sugar

Blueberry topping:
1 ¼ c. blueberry pie filling
1 c. whipping cream
Whip cream until stiff and fold in blueberry pie filling. Garnish top with fresh blueberry

Raspberry topping:
1 ¼ c. raspberry pie filling
1 c. whipping cream
Whip cream until stiff and fold in raspberry pie filling. Garnish top with fresh raspberries

Lemon topping:
1 c. Lemon Curd (next to the jams)
1 c. whipping cream
Whip cream until stiff and fold in Lemon Curd. (try with a drop of yellow food color?) Garnish with fresh blueberries.

For my wedding last summer, we also made these with raspberry and blueberry pie filling on top or below the whipping cream (NOT mixed in).







I also made some crab wontons. Here is the spread of our table after we had already pounded most of the pigs in a blanket :) It was fun and delicious.



Coming tomorrow...the tortilla soup I made but we were too stuffed with appetizers to eat. I guess it'll be lunch/dinner for tomorrow?? Oh well :)
