Spanish Rice

When I was in college, I fiddled with this recipe until it was as flavorful as I wanted. I added some more spices and cooked the rice in chicken broth. Enjoy :)

Spanish Rice


¼ c butter
1 c. rice
1 onion (diced)
½ red pepper (diced)
8 oz tomato sauce
1 ¼ c water with chicken base
½ t salt
1 t cumin
¼ t chili powder
1/8 t black pepper


Melt butter in saucepan over medium heat.

Add 1 cup rice and diced onion. Saute.

Then, add the diced pepper, tomato sauce, chicken broth, and spices.

Bring to a boil. Decrease temperature to low, cover, and simmer for 20 minutes.
